Food spoilage is a common concern in brewing and often results in a dumping of a batch, food poisoning, recall , bad press and sometimes even death. It is something we all keep in mind and try our very best to prevent as we go about our daily tasks. In this session the expert from the industry will talk about common spoilage microorganisms in breweries and their growth conditions, principles of detection and quantification and application of detection principle for prevention. Senior Application Specialist Brewing –Asia Pacific and South Asia, DuPont Nutrition and Biosciences
In his career spanning more than 25 years, Jaydeep has worked in different brewing and biotechnology companies, Heineken Asia Pacific, United Breweries, Iceberg Industries (Molson Coors) , Universal Breweries ( Mauritius), Novozymes, and now DuPont. He holds engineering degree in Food Technology and Biochemical Engineering from JadavpurUniversity, India and started his career in brewing industry in early 1990s. While completing his M. Brew from Institute of Brewing and Distilling, he also managed responsibilities in different brewing functions in India and Africa. Before moving to Thailand in July 2016, Jaydeep was based in Switzerland and had responsibilities in Technical Services in the regions of Europe, Middle East & Africa. His main interest is development of solutions to process non-conventional raw materials for sustainable brewing, development of new application tools useful for brewers and support training and development.

Product Specialist Microbiology –South East Asia , Sartorius Lab Products & Services
Randall is working with Sartorius as Product Specialist for the Microbiology portfolio and supports South East Asia region in his current position.
His qualifications include, a Diploma in Food Science, an Advanced Diploma in Medical & Pharmaceutical technology, and he majored in Microbiology and Immunology at the University of Melbourne. His previous work experience was as a Microbiologist with Novartis.
